Three Treasure Seafood Pot

Three Treasure Seafood Pot is similar to those 一品锅 that which usually found at the coffee shop 煮抄摊 where they have variety of seafood such as: prawn, squid, mussels, scallop, fish and mix vegetables. This version that I made consists of three seafood which are prawn, squid and fish fillet and the total ingredients including veggie is only about $8.00. Definitely much cheaper when comparing to those sold outside.


Ingredients: (serves 4)
1 Medium Squid, wash and skin removed
300g Prawns, shelled & de-veined
100g Fish Fillet
4 Shittake Mushrooms
1/4 Broccoli, cut into florets
1 Pack of Small Cons, Cut into halved
1 Carrot, peel and cut into shapes
10 Snow Peas
1 Teaspoon Mince Garlic
1 Cup Of Water

Seasonings:
2 Tablespoons Oyster Sauce
2 Tablespoons Rice wine
1/2 Tablespoon Sugar
1/2 Tablespoon Soy Sauce
1 Tablespoon Cornflour

1-2 Tablespoon Cornflour Water
Dash Of Pepper

Methods:
1. Score squid from the inner part first and cut into pieces. Cut fish fillet into small pieces around the size of the squid pieces.
2. Blanch carrot in a pot of boiling water (with salt and oil added) for 2 minutes, then add in broccoli and continue to simmer for another minute. Remove and rinse with cold water.
3. Preheat frying pan with 2 tablespoons of oil, saute garlic, snow pea and corn for a while before adding in the broccoli, carrot and mushroom.
4. Give the vegetables a quick stir, add in mixed seafood and stir for another minute.
5. Pour in the water and seasoning then cook over medium heat until the seafood are cooked.  Thicken with cornflour mixture then serve immediately.
